Oven-Roasted Bison Short Ribs
Slow-roasted until fall-off-the-bone tender, they're perfect for a special family dinner.
Three hours in a warm oven turns bison short ribs into something so tender it pulls away from the bone with barely any pressure. The meat becomes almost creamy, and the rendered fat is pure gold for cooking vegetables or finishing dishes later.
This is the meal you make when you gather around the table full of people you love.
Ingredients
3-4 lbs bison short ribs
1 tsp garlic powder
1 tsp onion powder
1 tsp smoked paprika
Salt and pepper to taste
1/2 cup beef broth or water
Instructions
Preheat oven to 300°F.
Pat the ribs dry and season generously on all sides with garlic powder, onion powder, smoked paprika, salt, and pepper.
Place ribs in a roasting pan and pour broth or water on the bottom.
Cover tightly with foil.
Roast for 3 hours until the meat is fork-tender and beginning to pull away from the bone.
Remove foil in the last 15 minutes if you'd like to develop a light crust.
Serve with roasted vegetables or cauliflower mash.
Save the Rendered Fat
The fat that cooks out of these ribs is liquid gold. Strain it, let it cool, and store it in a jar. Use it to roast vegetables, finish soups, or sauté with. Honoring every part of the animal and letting nothing go to waste.
