Bison Shepherd's Pie
Comfort food that's also a complete meal.
Shepherd's pie is the definition of one-dish comfort. This version uses regenerative bison, which means the meat tastes clean and the ground is lean enough that you don't have pools of grease to drain. Just real flavor, simple seasonings, and potatoes to bridge everything together.
Ingredients
1 lb ground bison
1 medium onion, diced
Mixed vegetables (2 cups frozen or fresh: peas, carrots, corn, green beans)
2 cups mashed potatoes (fresh or from a prepared batch)
1 cup shredded cheddar cheese
Salt, pepper, and garlic powder to taste
1 tbsp olive oil
Instructions
Preheat oven to 375°F.
Heat olive oil in a skillet and cook the diced onion until soft, about 2 minutes.
Add ground bison and cook until browned, breaking it apart, about 5-7 minutes.
Add mixed vegetables and season with salt, pepper, and garlic powder. Cook for 3-4 minutes.
Spread the bison and vegetable mixture in a baking dish.
Top with mashed potatoes, spreading evenly.
Sprinkle shredded cheese over the potatoes.
Bake for 30 minutes until the cheese is melted and the top is lightly golden.
Make It Ahead
Assemble shepherd's pie in the morning, cover it, and refrigerate. Once you’re ready to cook, just add 10 minutes to the baking time since you're starting from cold.
Vegetable Flexibility
Use whatever vegetables you have on hand. Frozen mixed vegetables are excellent and require zero prep. Fresh corn, green beans, mushrooms, or peas all work. Cooked root vegetables like parsnips or turnips add earthiness. The potato and cheese bind everything together.
