Honey Garlic Bison Meatballs

Sweet, savory, and versitle.

Meatballs work as an appetizer, a main course alongside rice, or the anchor of a week of meal prep. Ground bison is so lean that meatballs stay moist and tender.

The honey garlic sauce is simple and shiny, coating each meatball in a glaze. Make a double batch, and freeze half; you’ll be grateful later.


Ingredients

For the meatballs:

  • 1 lb ground bison

  • 1 egg

  • 1/2 cup breadcrumbs

  • 1/2 tsp garlic powder

  • 1/2 tsp onion powder

  • Salt and pepper to taste

For the sauce:

  • 1/4 cup honey

  • 1/4 cup soy sauce

  • 2 cloves garlic, minced

Instructions

  1. Preheat oven to 400°F.

  2. In a bowl, combine ground bison, egg, breadcrumbs, garlic powder, onion powder, salt, and pepper.

  3. Form into 12-16 meatballs and place on a lined baking sheet.

  4. Bake for 20 minutes until cooked through.

  5. While meatballs bake, whisk together honey, soy sauce, and minced garlic.

  6. Transfer baked meatballs to a bowl and toss with the sauce until coated.

  7. Serve over rice or with toothpicks as an appetizer.
