Slow Cooker Bison Chuck Roast

Let your slow cooker do the work. This recipe needs 15 minutes of your attention and 8 hours of its own.

There's something grounding about a slow cooker meal. You set it and forget it, and hours later your kitchen smells like comfort. This bison chuck roast is that meal.

Bison chuck becomes so tender when braised low and slow that it falls apart with a fork. The vegetables soften into the liquid, soaking up all the savory depth. The flavors deepen even more the next day.


Ingredients

  • 3 lb bison chuck roast

  • 4 carrots, cut into chunks

  • 4 potatoes, cut into chunks

  • 1 onion, quartered

  • 3 cups beef broth

  • 2 tsp garlic powder

  • 1 tsp dried rosemary

  • 1 tsp dried thyme

  • Salt and pepper to taste

Instructions

  1. Layer chopped vegetables on the bottom of your slow cooker.

  2. Season the bison roast generously with salt, pepper, garlic powder, rosemary, and thyme.

  3. Place the seasoned roast on top of the vegetables.

  4. Pour beef broth over everything.

  5. Cover and cook on low for 8 hours.

  6. The roast should be fork-tender and the kitchen will smell incredible.

Low and slow cooking breaks down the connective tissue in a chuck roast, turning it impossibly tender. Fast cooking toughens meat. This roast needs time to transform.

Serve This Way

Spoon the bison and vegetables into bowls and ladle the braising liquid over top. Serve alongside warm bread to soak up every drop. Or shred the meat, toss it with the vegetables, and use it as your protien base for tacos, sandwiches, or grain bowls throughout the week.
