Hearty Bison Stew
A complete meal in one pot. This stew is cozy, nourishing, and tastes even better the next day.
Hearty stews are foundational to many Indigenous foodways. Bison stew meat becomes incredibly tender when simmered gently for hours, and the broth picks up every ounce of that mineral-rich depth.
Make this on a day when you want the kitchen warm and your home full of the smell of something real cooking. A big batch made in fall can sustain you through winter, and it freezes well, too!
Ingredients
2 lbs bison stew meat (cut into chunks)
4 potatoes, chopped
3 carrots, sliced
2 celery stalks, chopped
1 onion, diced
4 cups beef broth
2 tbsp tomato paste
1 tsp dried thyme
Salt and pepper to taste
Instructions
In a large pot, combine all ingredients.
Bring to a boil over medium-high heat, then reduce to low.
Simmer covered for 2 hours until the meat is tender and vegetables are soft.
Taste and adjust seasonings as needed.
Serve with crusty bread or over rice.
