One-Pan Garlic Herb Ground Bison

Weeknight meals don't have to be complicated. This one-pan bison dish proves it.

This recipe comes from the kitchens of mothers and families we serve through our Meat for Mamas program. It's the kind of meal you make on a school night when everyone's tired but your body still needs real food, and fast.

Ground bison is lean, cooks fast, and has a rich, clean flavor that shines when you keep seasonings simple. Unlike ground beef, it won't leave grease pooling in your pan. You're getting nutrient-dense protein, iron, and B vitamins in every bite.


Ingredients

  • 1 lb ground bison

  • 1 onion, diced

  • 3 cloves garlic, minced

  • 2 zucchini, chopped

  • 1 bell pepper, chopped

  • 1 tsp garlic powder

  • 1 tsp onion powder

  • 1 tsp paprika

  • Salt and pepper to taste

  • 2 tbsp olive oil

Instructions

  1. Heat olive oil in a large skillet over medium-high heat. Sauté the diced onion until softened, about 2 minutes.

  2. Add minced garlic and cook for another minute until fragrant.

  3. Add ground bison and cook, breaking it apart as it browns, about 5-7 minutes.

  4. Stir in chopped zucchini and bell pepper along with garlic powder, onion powder, paprika, salt, and pepper.

  5. Cook for 8-10 minutes, stirring occasionally, until vegetables are tender.

  6. Serve over rice, quinoa, or with roasted sweet potatoes.
