Ten minutes at the stove and you're ready to go out into the world. This scramble works on weekday mornings when you need to eat fast.

Ingredients

  • 1/2 lb ground bison, cooked and crumbled (or use leftovers from another recipe)

  • 6 eggs

  • 2 cups fresh spinach, roughly chopped

  • 1/2 cup diced onion

  • 1/2 cup shredded cheese (optional)

  • Salt and pepper to taste

  • 1 tbsp butter or olive oil

Serve with: warm tortillas or toast, or roasted potatoes and fresh fruit

Instructions

  1. Heat butter or olive oil in a large skillet over medium heat.

  2. Add diced onion and cook until softened, about 2 minutes.

  3. Add the cooked ground bison and warm through.

  4. Push everything to the sides of the pan and crack eggs into the center.

  5. Scramble the eggs gently, then fold in the spinach, bison, and onion.

  6. Add cheese if using and cook until eggs are just set, about 2-3 minutes.

  7. Season with salt and pepper.

  8. Serve with warm tortillas or toast.

Use Leftovers

Already cooked ground bison from tacos? Shredded bison from last night's roast? This meal the perfect excuse to use leftovers.

Make It Ahead

Cook and cool the bison, onion, and spinach mixture the night before. In the morning, just warm it gently, then add the eggs. You cut cooking time in half and simplify your morning routine.
