Bison and Vegetable Stir Fry

Perfect for using up whatever vegetables you have on hand. Serve over rice or noodles.

Stir fry is one of the fastest ways to get real food on the table. Bison steak cooks in minutes once it hits hot oil in a wide pan over high heat. The whole meal comes together faster than you can order takeout.

Ingredients

  • 1 lb bison steak, thinly sliced

  • 2 cups broccoli florets

  • 1 cup carrots, sliced thin or cut into matchsticks

  • 1 cup snap peas

  • 3 cloves garlic, minced

  • 3 tbsp soy sauce

  • 1 tbsp fresh ginger, minced

  • 1 tbsp sesame oil

  • 1 tbsp vegetable oil

  • Cooked rice or noodles for serving

Instructions

  1. Heat vegetable oil in a large skillet or wok over high heat.

  2. Working in batches if needed, add bison slices and cook until browned, about 3-4 minutes. Remove and set aside.

  3. Add another drizzle of oil if needed, then add broccoli, carrots, and snap peas. Stir-fry for 4-5 minutes until vegetables are tender-crisp.

  4. Add minced garlic and ginger, cook for 1 minute until fragrant.

  5. Return bison to the pan. Add soy sauce and sesame oil, tossing everything together.

  6. Cook for 1-2 minutes until everything is heated through.

  7. Serve immediately over rice or noodles.

Vegetable Swaps

Use whatever vegetables you have on hand. The key is high heat and not overcrowding the pan.

Make It Hotter

Add a pinch of red pepper flakes or a splash of sriracha to the sauce if you like heat. Fresh chili paste works too!
